Apple Cinnamon Blondies
Another day...another blondie...I love blondies in most any variation and this apple cinnamon spin is no exception! Precooking them apples helps reduce the moisture and keep the dense blondie texture.
Apple Cinnamon Blondies
1 cup chopped granny smith apple
1 tablespoon brown sugar
1 teaspoon cinnamon
1⁄2 cup salted butter, melted
1 cup dark brown sugar
1 large egg
1⁄2 teaspoon vanilla extract
1 cup all-purpose flour
1⁄2 teaspoon cinnamon
1⁄4 teaspoon salt
1⁄2 teaspoon baking powder
1⁄8 teaspoon baking soda
Cook apples, brown sugar, and cinnamon in a small skillet over medium heat for 2-4 minutes until the apples are soft. Set aside to cool.
In a medium-sized mixing bowl, whisk melted butter and brown sugar. Add the egg and vanilla extract and stir until completely combined.
Add flour, cinnamon, salt, baking powder, and baking soda. Use a spatula to stir until combined. Add cooked apples and stir until combined.
Spread batter into a parchment-lined and sprayed 8-inch square pan. Bake at 350 degrees for 20-25 minutes or until the center is set.
