Apple Cinnamon Blondies
1 cup chopped granny smith apple 1 tablespoon brown sugar
1 teaspoon cinnamon
1⁄2 cup salted butter, melted
1 cup dark brown sugar
1 large egg
1⁄2 teaspoon vanilla extract 1 cup all-purpose flour
1⁄2 teaspoon cinnamon
1⁄4 teaspoon salt
1⁄2 teaspoon baking powder 1⁄8 teaspoon baking soda
Cook apples, brown sugar, and cinnamon in a small skillet over medium heat for 2-4 minutes until the apples are soft. Set aside to cool.
In a medium-sized mixing bowl, whisk melted butter and brown sugar. Add the egg and vanilla extract and stir until completely combined.
Add flour, cinnamon, salt, baking powder, and baking soda. Use a spatula to stir until combined. Add cooked apples and stir until combined.
Spread batter into a parchment-lined and sprayed 8-inch square pan.
Bake at 350 degrees for 20-25 minutes or until the center is set.
