Coconut Blondies
Basic pantry ingredients come together to make these chewy coconut blondies. The batter comes together quickly and bakes up nearly as fast.
Coconut Blondies
1/2 cup salted butter, melted
1 cup dark brown sugar
1 large egg
2 teaspoons vanilla extract
1/2 teaspoon baking powder
1/8 teaspoon baking soda
1/2 teaspoon salt
1 cup all-purpose flour
1 cup unsweetened shredded coconut
1. In a medium sized mixing bowl, whisk melted butter and brown sugar. Add the egg and vanilla extract stir until completely combined.
2. Add baking powder, soda, salt, and flour. Use a spatula to stir until combined. Add coconut and stir until combined.
3.Spread into a parchment lined and sprayed 8 inch square pan.
4.Bake at 350 degrees for 20-25 minutes or until the center is set.
