Mini Almond Croissants
I made almond croissants for my sister Ann's wedding and so many people gave the same feedback--"they're so big!" And they weren't wrong.
Originally I made these almond croissants using the big Costco croissants and these mini ones are the perfect little treat whether you just want one or two!
Mini Almond Croissants
12 mini croissants
Syrup:
â…“ cup boiling water
3 tablespoons sugar
¼ teaspoon almond extract
Filling:
¾ cup almond flour
¾ cup powdered sugar
2 teaspoons cornstarch
6 tablespoons butter, softened
1 large egg
1 teaspoon vanilla
¼ teaspoon almond extract
Sliced almonds
Slice the croissants in half. Set aside.
Mix water, sugar, and almond extract until the sugar is dissolved. Allow to cool.
Cream almond flour, powdered sugar, cornstarch, and butter until smooth. Mix in the egg, vanilla, and almond extract.
Dip sliced croissants in the syrup. Spread a generous tablespoon of cream in the croissant. Close and spread a teaspoon of filling over the top. Press the top into the sliced almonds.
Place on a parchment-lined baking sheet. Bake at 400 degrees for 12-15 minutes or until golden brown.
This reminds me of the mini croissant breakfast cereal that L'Appartement 4F in NYC sells!
