Ready for homemade marshmallows?
Marshmallows are certainly not something that most people make so when you give them as a gift they feel really special!
I would consider these a little more of a project—- you have to wait overnight for them to set and you are working with hot sugar (not the best project for kids) despite that they are really simple to make a have very little active time.
The main steps are…
whisk gelatin and water
heat sugar, water, and corn syrup on the stove
add the sugar syrup to the gelatin and whip until cooled
pour into a prepared pan
wait 8 hours
cut into pieces
You can swap the mint extract for vanilla or something else, but I would say you need the extract as gelatin has a distinct flavor that’s not super yummy. Your recipient can eat them on their own, put them in their hot cocoa, or roast them over an open fire.
Mint Marshmallow
3 (1/4 oz) pkgs unflavored gelatin
1 cup water, divided
1 and 1/2 cups sugar
1 cup corn syrup
1 teaspoon mint extract
non stick cooking spray
1/4 cup powdered sugar
1/4 cup cornstarch
In the bowl of a stand mixer whisk gelatin and 1/2 cup water until incorporated.
In a medium sized saucepan over medium heat cook 1/2 cup water, sugar, and corn syrup over medium heat until it reaches 235 degrees. Carefully pour the hot syrup into bloomed gelatin and whip until the mixture has cooled down and is thick and fluffy about 10-15 minutes. Add the mint extract and stir until combined.
While the marshmallow is whipping prepare your pan. Start with whisking the powdered sugar and cornstarch until combined.
Genrously coat a 9x13 inch pan with non stick cooking spray and sprinkle about half of the coating mixture over the top. Tap your pan to move the coating all around the pan and up the sides. Dump an excess out of the pan and back into your bowl of coating.
Spread the marshmallow into the prepared pan and allow to sit for 6-8 hours or overnight.
Use your fingers to work the marshmallow out of the pan by gently pulling up the edges of the marshmallow and remove from the pan. Grease a sharp knife or bench scraper and cut the marshmallow slab into your desired size pieces. Place the marshmallow pieces back in the pan and pull apart any marshmallows that are stuck together. Pour the remaining coating over the top and toss to coat the marshmallows on all sides so they do not stick. Package and gift!
