Day 5 and it's a big one! Meet the bakery box.
The typical Christmas goodie boxes have dipped pretzels, Christmas crack, sugar cookies, and myriad of different treats. While these treats are good I am excited to present you with an alternative.
It is still a box filled with sweet treats, but something more akin to what you would find in a nice coffee shop or bakery. To achieve this I made up a few types of cakes, blondies, and scones then cut the cakes and blondies into pieces and mixed them all of these treats together in bakery boxes to produce a special gift.
I used 14x19 inch bakery boxes from Walmart, but you do not need to make such large boxes as this is a lot. I place a cake board in the bottom of the box as well as parchment paper to prevent the box from picking up any moisture.
I baked these 2 cakes (Salted Chocolate Penuche Cake and Pumpkin Crumble Cake) in 8 inch round pans. I then cut each cake into 4 pieces, but you could easily cut it into 6—even 8 pieces.
Originally I was planning on baking a few more cake variations in 8 inch round pans, but somehow I have ended up with only one cake pan and I didn’t have the time to wait for each cake to bake and cool so I made a Blueberry Crumble Sheet Pan Coffee Cake in a rimmed sheet pan and then cut it into 4 big chunks and used a large metal spatula to transfer them each to their box. To prevent it from getting too messy I glazed it after I placed it into the bakery box.
I also made Cinnamon Chip Scones and dropped a couple into each box. These are best enjoyed fresh so I encourage you to bake them the same day you are gifting them. The dough could be made the day ahead of time, wrapped up in a disk and then cut and baked the next day.
I made a double batch of these cinnamon rolls but made them with just the brown sugar/cinnamon filling and not the pumpkin pie filling. The double batch made enough rolls for four 8x8 inch square disposable pans.
To save time I made a triple batch of blondie dough, split it three ways, and added the mix-ins to each portion creating three different flavors- coconut, cranberry white chocolate, and pistachio dark chocolate.
